| Marsala. (Chicken Marsala) Chicken marsala is an Italian-American food dish using Marsala wine in the sauce. A typical Marsala sauce involves reducing the wine almost to a syrup with onions or shallots, then adding mushrooms and herbs. | |||
| Roulade. (Southern Chicken Roulade) A dish consisting of a slice of meat that is rolled around a filling and cooked. | |||
| Ciabatta. (Ciabatta Cheese Bread) A hard crusted yet soft and fluffy Italian bread. | |||
| Frittata. (Tomato Cilantro Frittata with Chorizo Sausage) A frittata is a type of Italian omelette, either simple or enriched with additional ingredients, such as meats, cheeses, vegetables and even pasta. | |||
| Prosciutto. (Prosciutto Wrapped Chicken) Italian salt-cured ham. | |||
| Risotto. Rice cooked with broth and sprinkled with grated cheese. The name literally means little rice. | |||
| Orzo. Rice-shaped pasta, slightly smaller than a pine nut. | |||
| Filo Dough. Is paper-thin sheets of raw, unleavened flour dough used for making pastries in Middle Eastern, Greek and other regional cuisines. | |||
| Tilapia. Although relatively new to North American fish markets, tilapia are actually a group of fish (cichlid) that traces its origins to North Africa and the Middle East. These mild, white, sweetly flavored fish have been wild-caught or pond-raised around the world for centuries. | |||
| Piccata. "Sliced, sautéed, and served in a sauce containing lemon, butter, and spices. | |||
| Beurre Blanc. Sauce made a reduction of flavored stock, with butter whisked gradually in to thicken and form a sauce. | |||
| Rigatoni. A ribbed tubular form of pasta, larger than penne but with square-cut ends, often slightly curved. | |||
| Manicotti. Large pasta tubes stuffed with chopped meat or mild cheese and baked in tomato sauce | |||
